Also, I'm procrastinating on trying to dig my car out, so making this breakfast again just to take pictures seemed like an excellent idea this morning.
Pancakes makes one serving
1 tablespoon butter, melted
1/4 cup milk (I used almond milk)
1/2 cup flour
1 tablespoon sugar
3/4 teaspoon baking powder
Heat a greased griddle over medium heat.
Stir together butter, egg, and milk. Add in flour, sugar, and baking powder and mix together, only until dry ingredients are moistened and batter is still slightly lumpy.
Pour pancake mix into griddle and flip as soon as bubbles start to form in batter. Serve warm with real maple syrup (and bacon, duh.) Enjoy!
And now it's time to end the procrastination and attempt to get that car out of the mountain of snow... and hope that the road is actually plowed. Ugh.
