So many of the recipes I make at home come from an effort to recreate something I have recently had at a restaurant. A couple weeks ago I had some delicious fried pickles, and once I have an unhealthy food, it's a terrible rabbit hole where I just want more. The only way to curb this craving is to find a healthier alternative and I found just that with these baked "fried" pickles. Back in the day, my friend and I were obsessed with HungryGirl and would bread things with Fiber One. There was no pretending those recipes were tasty even though we told ourselves they were. These, on the other had, are legitimately delicious.
1 16 oz. jar kosher dill hamburger pickle slices
1/2 cup panko breadcrumbs
1/4 cup cornmeal
1/4 cup flour
1/4 tsp chili powder
1/4 tsp paprika
Dash of salt
1 large egg
Olive oil spray
Preheat oven to 450 degrees. Mix breadcrumbs, cornmeal, flour, chili powder, and paprika together in shallow dish.
Whisk egg with a dash of chili powder.
Dip pickle slices in egg and then in breadcrumb mixture, pressing down to make sure they are entirely covered.
Spray baking sheets with olive oil spray and place pickles on baking sheet. Spray tops of pickles (I missed this step when I made the recipe for the pictures, hence why they could be more golden brown!) Bake for 10 minutes, turn, and bake an additional 5 minutes. Serve hot with ranch dressing. Enjoy!
