Wine Night Recipes

Thankfully I made all the food for my wine night the night before because I was struck with a terrible headache that afternoon and had I not made the food already I don't know what I would have done (this is also my excuse for not having better pictures). To be honest though, these dips all taste better when made 24 hours ahead of time anyway. So, without further ado, here are my three easy-peasy recipes from last week's wine night - and all can be served with tortilla chips which, of course, makes life easier.

 Bacon Cheddar Dip

32 oz. sour cream
1 packet ranch mix
1 jar bacon bits (3 oz.)
1.5 cups shredded cheddar

Mix and let sit in fridge for a few hours to meld the flavors.

 (pretend there's jalapeno in this picture... I didn't add it until the next day but it definitely added a whole lot of color)

Shrimp Salsa

1 lb shrimp diced
1/2 medium red onion diced
1 jalapeno pepper diced
1/2 red pepper diced
1/2 yellow pepper diced
1 tomato diced
juice from one lime

Mix, season with salt and pepper, and let sit in fridge for a few hours to meld the flavors.

Strawberry Salsa

1 lb strawberries diced
1/2 medium red onion diced
1/2 red pepper diced
1/2 yellow pepper diced
1 cup pineapple diced
a few tablespoons of fresh basil minced
splash of orange juice
splash of lime juice

Mix and let sit in fridge for a few hours to meld the flavors.
