Monday Recipe: Shrimp and Avocado Salad

Shrimp and Avocado Salad
This has become my go-to healthy, light, easy dinner. I can whip up a big batch in a matter of minutes and it keeps for several days (in fact, it actually gets better as the flavors meld together.)

1 Red Pepper, diced
1 Green Pepper, diced
1 Jalepeno, diced
½ Onion, diced
1 Avocado, crushed
2 Large handfuls of small shrimp (I just use thawed frozen shrimp)
Cilantro, chopped
Lime Juice
Seasoning: Minced garlic, pepper, chili powder

Mix together vegetables and shrimp. The avocado will act as a binding ingredient. Add cilantro, lime juice, and seasoning to taste. Enjoy!
